I usually warm through Angel Hair Shirataki noodles as a base for this dish, but you could use rice or ramen or whatever.

  1. In a large pot or wok on stove top / medium heat - saute white onions, mushrooms and chestnuts in butter until onions are translucent. add ground chicken to pan cook well add green onions (hold some back for garnish), sauces and sugar substitute.
  2. Simmer until the liquids reduce by half serve in lettuce "cups" or in lettuce wraps
  3. Garnish with green onions and cashews

I didn’t realize you guys were leaving so soon. I have lettuce like crazy in my garden, so would have been happy to pass it on. This is a good idea. I have to leave out butter and cashews, but can sub in macadamia nut oil and peanuts. Thanks.
