We bought a June Oven this Summer, and it did not disappoint. June is a smart cooking device; it will do all kinds of things and has programs available to auto-recognize the food and cook it appropriately. The June Oven is full of geekery and technology, but it is also, and more importantly, it is easy to use, and June is very efficient. June will cycle through different modes (bake, convection, broil, and such) to make sure your food comes out perfect. There is a camera that you can check-in on your meal for fun. However, the real fun is how June keeps an EYE on the food and will adjust the program accordingly. No, it does. The June Oven Technology at first seemed like too much, why would I need my oven to recognize the food – I know what I put into the oven. But it is so much more than that. Now, onto the real reason for this post.

Keto-Friendly Almond Cookies

These 4-ingredient keto-friendly almond cookies are easy to make and delicious!

Enter THE COOKIE. I was looking for a quick and easy cookie. I needed a low-carb, gluten-free, and keto-friendly recipe – I know some of you just won “hipster bingo” on that last sentence, you’re welcome. I have some cookie recipes that I love but not a simple “sugar cookie” style. In searching “Keto Butter Sugar Cookie,” I came across Savory Tooth Keto Butter Cookies, the first attempt was delicious but had a fair amount of crumble. Which is fine, but I was looking for some sweet, soft, cloud-like cookies that could have come out of my Grandma Puttick’s kitchen.

The second attempt is what you see pictured, was a winner. I replaced Vanilla Extract with Almond, and I used 2 TBSP of Clear Fiber Syrup by Sukrin instead of the Erythritol. I think the liquid sweetener led to a soft and chewy texture. After rolling the dough into little balls, I gently pressed the center with my thumb. For the “filling” I divided 1 TBSP of my favorite Fig Jam between the 10 cookies and then topped each with a Marcona Almond.

When I put the pan in the June Oven, and it recognized COOKIES – Fresh, Homemade to be exact. I let the program take over, and 10 minutes later, I was eating a cookie. A perfectly cooked, soft, and chewy cookie. The next morning I enjoyed 2 delicious and perfectly baked cookies with my hot cuppa tea – success!!
